The Amazing Avocado
/ Susan ScobieYou know I love a perfectly ripe California avocado—like, really love. And with all the new avocado recipes I’ve been developing, it was time to round them up in one place. Enjoy this little celebration of The Amazing Avocado!
The key to great guacamole is fresh ingredients — ripe avocados, lime, a little heat, crunchy onions. This is what you want when you’re craving guac that tastes like it was made right at the table.
I love this classic Bacon, Lettuce, Avocado & Tomato sandwich, with a couple of small twists. Add red onion and finish with a drizzle of olive oil and a sprinkle of salt.
I saw Chef Brooke Williamson make a soy‑cured egg on a cooking show, and I knew I had to try it. Pure gold—glossy, savory, and unbelievably delicious. I paired it with an all‑time favorite mix of avocado, smoked salmon, cream cheese, and red onion. So good!
Today, my local grocer had fresh, sashimi grade tuna and ripe avocados. I took that as a sign to make this fresh and tasty appetizer. And I love these steel martini glasses. They're such a great little bowl for a tuna tartare.
Pozole Verde with Chicken is one of those bowls that just hits the spot every single time. It’s warm, bright, a little tangy, and packed with tender chicken, hominy, and all those gorgeous green chiles and tomatillos.
So scrumptious Tuna Tartare. I love the combination of fresh flavors in this delicious and healthy appetizer.
OMG, this tasty appetizer is a dream for those of us who love The Amazing Avocado!
