Smoked Salmon & Cream Cheese with Soy Cured Egg Yolk Toast

I saw Chef Brooke Williamson make a soy‑cured egg on a cooking show, and I knew I had to try it. Pure gold — glossy, savory, and unbelievably delicious. It’s the kind of topping that makes you pause mid‑bite because it’s that good. Spread the yolk like jelly over the toppings and enjoy.

INGREDIENTS, highlights and insights.

Sourdough Bread: A sturdy, tangy foundation that crisps beautifully in the pan. Its chew and structure can handle rich toppings like cream cheese and salmon without getting soggy, giving every bite a satisfying crunch.

Butter: A small pat in the skillet transforms the bread, adding golden edges and a warm, savory richness that complements the cool toppings. It’s the quiet flavor‑builder that makes the toast feel indulgent.

Cream Cheese: Smooth, tangy, and creamy — the perfect counterpoint to smoky salmon. It creates a soft, luxurious base that balances the saltiness and ties all the toppings together.

Smoked Salmon: Silky, savory, and full of depth. Its smoky richness plays beautifully with the cool cream cheese and the umami punch of the soy‑cured yolk. A little goes a long way.

Soy‑Cured Egg Yolk: The star of the toast. Curing the yolk in soy sauce concentrates its flavor and transforms it into something glossy, savory, and almost jam‑like. Spread it across the toast and it becomes a rich, umami‑packed finishing layer.

Shallots: Thin slices add a crisp, sharp bite that cuts through the richness. Their mild onion flavor brightens the toast without overpowering the more delicate ingredients.

Fresh Chives: A sprinkle of freshness. Chives bring a gentle oniony lift and a pop of color that makes the whole toast feel more vibrant.

Salt & Pepper: Just enough to sharpen the flavors. A tiny pinch enhances the cream cheese and salmon while keeping the soy‑cured yolk from tasting too sweet.

NOW WE’RE COOKING…

FIRST, make the soy cured egg yolks.

Keep in mind that the process of curing egg yolks in soy can take up to 48 hours. Follow this recipe.

NEXT, toast the bread.

Toast and butter the bread. I prefer toasting the bread in a cast iron pan, in which case the butter melts in the pan and the bread soaks it up as it toasts.

ASSEMBLING, layer the ingredients over the toast:

Once the toasted bread has cooled, spread half of the cream cheese over each slice. Next, layer half of each of the following ingredients in this order: capers, salmon, avocado, shallots. Top with a cured egg yolk to the center of each toast and gently spread it like jelly across the top. Drizzle olive oil or lemon-infused olive oil over toast. Finally, sprinkle with chives and enjoy the deliciousness!
