Avocado Chorizo Egg Gourmet Toast

This gourmet toast is great for breakfast or lunch. The avocado smash, chorizo and runny egg make a fantastic flavor combination.

Ingredients

  1. Put the 2 avocados in a bowl with the juice of half a lime and a pinch of salt. Use a fork to mix, but leave the avocado a little chunky. Set aside or put in the refrigerator until ready to use.
  2. Brown the chorizo in a fry pan about 5 minutes. Put a couple of paper towels on a plate and set the cooked chorizo over. Dab over the chorizo with another paper towel to remove some of the grease. Set aside.
  3. Fry eggs in butter to desired cook. I like them super runny so I don't turn them over and finish them with a lid on the pan on low.
  4. Toast the bread slices in the same pan used to cook the chorizo to desired doneness. Place toast on plates.
  5. Time to assemble that toast. Divide the smashed avocado in two and spread over each toast. Then layer items 3 - 7 of the ingredients above (each divided by two): chorizo over avocado, sprinkle the cheese over the chorizo, lay the fried eggs on top.
  6. Finally, place pickled onions over and enjoy your meal!
