Ham & Egg Avocado Mash Toast

This recipe stacks rich, red bell pepper and onion cream cheese, tender butter lettuce, savory ham, and bright citrus-mashed avocado on lightly toasted bread. Topped off with a soft-cooked fried egg and a sprinkle of crispy shallots, every single bite delivers the perfect balance of creamy, savory, crunch, and richness.

PREP THE ELEMENTS

Cook to Perfection: Let the whites set for about 2 minutes. Then, pop a lid over the pan for another minute — this gently cooks the tops so the whites fully set while keeping the yolks perfectly jammy and runny (or cook them a bit longer if you prefer firmer yolks!)



FINISH AND SERVE

Gently slide a warm fried egg onto each avocado-layered slice of toast. And finish with a generous sprinkle of crispy shallots over the eggs for that perfect final crunch, then serve immediately while warm!

  1. Very lightly toast the bread. Just enough so it holds up under the toppings, but not enough to brown much.
  2. Mix together the cream cheese, diced bell pepper and diced onion or chives. Spread half over each slice of toast.
  3. In a small bowl, smash the avocado with the lime juice and set aside.
  4. Layer the butter lettuce leaves over the spread. Then layer the ham over the lettuce and spread the smashed avocado over the ham.
  5. Heat olive oil in a non-stick skillet on medium heat. Once the pan is heated, add each of the eggs and sprinkle a little salt and pepper over.
  6. Let the eggs cook for about 2 minutes, then cover the pan and let them cook another minute or until the yolk is just starting to set (or to your desired level of doneness).
  7. Gently slide each egg onto the smashed avocado. Sprinkle the crispy shallots over the egg and serve immediately.
