A quick drizzle of Chipotle Ranch on the inside pulls everything together. It’s an easy, no‑fuss meal that works for lunch or dinner.
INGREDIENTS HIGHLIGHTS
Low-Carb Flour Tortillas (2, burrito size): A pliable, sturdy foundation that holds up to all the savory fillings without tearing. They crisp up to a gorgeous, golden crunch in the pan while keeping things low-carb friendly.
Sliced Ham (4 slices): Provides a rich, smoky, and salty protein base. Layering it ensures a satisfying, savory bite throughout the entire quesadilla.
Fresh Tomato (1 large, thin sliced): Adds a juicy, sweet brightness and clean acidity that balances out the rich meats and creamy sauce.
Dill Pickle Chips (1/4 cup): The ultimate tangy crunch! Their sharp, briny kick cuts through the richness of the ham and butter, adding a vibrant pop of flavor.
White Onion (1/4 onion, thin sliced): Delivers a crisp texture and a mild, peppery bite that elevates all the savory layers.

PREP THE INGREDIENTS
Thinly slice the tomatoes and white onion. Gather the Swiss cheese, pickle chips, and tortillas. I used low-carb flour tortillas to keep the meal low-carb, since I’m into that right now.
Melt some butter in a skillet over medium heat and brown the ham. Let it sizzle a minute or two on each side until it gets nice and brown, but not overly charred.
BUILD THE QUESADILLA SANDWICH
Add a little more butter to the skillet. Once the butter has melted, add a tortilla and then layer the ingredients over it, starting with the ham. Drizzle a little Chipotle Ranch Dressing over top (recipe here), then add the tomatoes, pickles, and onion. Finally, add another layer of ham and then the cheese and top with the second tortilla.
Put the lid on the pan and let the quesadilla sandwich cook for a minute or so.
FLIP AND FINISH THE COOK
Once it’s browned a bit on the bottom—check by lifting the edge of the tortilla to get a peek under it—carefully flip the quesadilla sandwich over, add the lid, and cook for another 1–2 minutes.
SLICE AND SERVE
Remove the quesadilla sandwich from the pan to a cutting board, slice and serve immediately with the Chipotle Ranch Dressing (recipe here).
