Turkey Leftovers Chili & Egg Toast
/This has quickly become my favorite new toast recipe. A luscious cream cheese schmear, a mound of chili, a perfectly fried egg, and gooey melted cheese come together in one irresistible bite. It feels like such a treat — and the best part is, you can enjoy it for breakfast, lunch or dinner.

Sourdough Bread: A hearty, tangy base that stands up beautifully to saucy toppings. Its crisp edges and chewy center give the toast structure, so the chili and egg feel layered rather than heavy.
Butter: A quick melt in the pan gives the bread golden edges and a warm, savory richness. It deepens the flavor and helps the toast develop that irresistible crisp‑but‑tender bite.
Cream Cheese: Adds a creamy balance to the strong flavors of the chili and egg yolk.

Fried Egg: A runny yolk becomes an instant sauce, blending into the chili and adding silky richness. Even a jammy yolk works beautifully, giving the toast a comforting, layered texture.
Fresh Chives: A bright, oniony lift that cuts through the richness. They add color, freshness, and just enough sharpness to keep the toast balanced.
Salt & Pepper: A small but essential finishing touch. Salt sharpens the chili’s flavor, and pepper adds a subtle earthy heat that ties everything together.
NOW WE’RE COOKING…
FIRST, fry the eggs.
Fry each of your eggs to desired level of doneness. I prefer a runny yolk so I don’t even flip the egg; instead I put a glass cover over the egg while it cooks and remove it from the heat when the white is cooked and the yolk is just slightly cooked.
NEXT, warm the chili.
Zap the chili in the microwave or heat in a pan until it’s warmed through.
NEXT, toast the bread.
Toast and butter your bread. I prefer toasting the bread in a cast iron pan, in which case the butter melts in the pan and the bread soaks it up as it toasts.
ASSEMBLING, layer the ingredients over the toast:
Once the toasted bread has cooled, slather the cream cheese onto the toast, then spoon the chili over each toast. Next gently lay the egg over the chili. Sprinkle the sliced shallots over and give it a pinch of salt and pepper. Sprinkle the cheese over and zap in the microwave so it gets a little melty.

- Melt butter in a skillet at medium heat. Toast bread slices on both sides.
- Let bread cool and then spread half Herb Cream Cheese Schmear (recipe here) on each toast.
- Cover toasts with 1/2 cup Leftovers Turkey & Sausage Chili (recipe here) on each toast.
- Fry each egg to desired doneness. Finish with a pinch of salt and pepper. Place each egg on a toast.
- Sprinkle half of the cheddar cheese over each toast. Microwave for 30 seconds, or until the cheese melts as desired. Keep in mind the longer you microwave the more soggy the bread will become as the cream cheese schmear and chili begin to run. By the way, this toast soggy is delicious!
- Sprinkle each with half of the fresh chives. Enjoy!
