Best Meatball Sub

This meatball sub takes a classic comfort sandwich and gives it a little extra love. Toasted deli rolls brushed with garlic‑parsley butter hold layers of melty provolone, rich marinara, and tender homemade meatballs. It’s hearty, simple to assemble, and just as good served whole for dinner as it is sliced into bite‑sized pieces for a crowd.

Each sub makes a great lunch or dinner meal for one or you can slice it into fours to make it an appetizer. Use toothpicks to hold the pieces together.

As always, I recommend pulling your ingredients together before you begin. The prepping process really helps the cooking and assembly go smoothly. In this recipe, I used the meatballs and sauce from a recipe I made last night. So I’m just letting it simmer a bit to heat up. Related recipes can be found below in the recipe card.

Set the oven to broil, use the Lo setting if you have it. Lay the bread out on a baking sheet. Deli hero subs make a great bread for this recipe. Slather the bread with the melted garlic parsley butter. Then sprinkle with a little grated parmesan. Broil until the bread gets toasty and brown. Be careful not to overcook it because it’s going back in the oven once it’s stuffed.

Reduce the oven to 375 (f). Transfer the bread into baking dishes so it’s open about half way in order to hold the cheese, meatballs, and sauce. Layer two slices of provolone into each sub.

Now, you’ll pour some sauce over the cheese and sprinkle with parmesan cheese.

Add the meatballs. My bread fit 4 meatballs each perfectly. Which helps if you intend to use this for appetizers as they can more easily be cut into four pieces (see the picture above).

Sprinkle parmesan cheese and fresh Italian seasoning over the meatballs. If you prefer, you can stop at this point and go straight to the oven with these. I prefer to add more provolone cheese, as shown below.

Lay thin slices of provolone over the meatballs. It’s ready for the oven!

Cook at 375 (f) for about 10 minutes. The result will be a flavorful, meaty-cheesy deliciousness!
