These zesty pickled red onions will keep in the fridge for up to two weeks.

I used an 8 oz jar for this recipe.

  1. Thinly slice the red onion. I use a Mandoline to get the slices as thin as I can. Set asid.
  2. Place vinegar, water, salt and sugar in a medium pot over medium heat and stir until salt and sugar melts. Skip the sugar, like I do, if you want them extra tart.
  3. Fill the jar with the onions, then add the garlic and peppercorn over them.
  4. Once the liquid has cooled, poor into the jar until it fills. Shake so the added items mix with the onions.
  5. The pickling will take about an hour if the onion is sliced very thin. I usually let them sit in the fridge overnight before I use them.
