Pickled Red Onions

Pickled Red Onion
These zesty pickled red onions will keep in the fridge for up to two weeks.
I used an 8 oz jar for this recipe.

- Thinly slice the red onion. I use a Mandoline to get the slices as thin as I can. Set asid.
- Place vinegar, water, salt and sugar in a medium pot over medium heat and stir until salt and sugar melts. Skip the sugar, like I do, if you want them extra tart.
- Fill the jar with the onions, then add the garlic and peppercorn over them.
- Once the liquid has cooled, poor into the jar until it fills. Shake so the added items mix with the onions.
- The pickling will take about an hour if the onion is sliced very thin. I usually let them sit in the fridge overnight before I use them.
