Shrimp & Marinade
  1. In a medium bowl, whisk together the olive oil, lime juice, garlic, smoked paprika, salt, and black pepper.
  2. Thread 3 shrimp and red onion chunks (red onion should be between the first and second shrimp, and the second and third shrimp) onto each soaked skewer. Place in a shallow dish, and pour the marinade over top for 15 to 20 minutes. Note: Do not crowd the shrimp too tightly against the onions; leaving a little space allows heat to circulate so they sear evenly.
  3. While your shrimp are marinating, preheat the grill to medium-high heat. Grill the skewers uncovered for 2 to 3 minutes per side until the shrimp are opaque and pink, and the onion edges are lightly charred.
Creamy Lime Sauce
  1. In a small bowl, whisk together the sour cream, lime juice, lime zest, minced garlic, chopped cilantro (or chives), and a pinch of salt until smooth. Cover and refrigerate while prepping the skewers.
  2. Spoon the chilled sauce into a small bowl and drizzle over the shrimp skewers or serve alongside them for dipping.
