Reviving Green Onions & Bok Choy

Sometimes—okay, often—I don’t get through my vegetables before they wilt and become unusable. So, I’ve been learning how to revive certain staples that I use all the time, like green onions. This week, I had some bok choy that started wilting a bit before I was ready for it, and I wondered if the same trick would work.

My sister, who is an absolute wizard at this, walked me through the process. Here is how to bring your veggies back to life:

  • Trim and check: Pull off any overly wilted stems or leaves. Cut a small slice off the very bottom of the veggie—unless it already has healthy-looking roots (just do a quick smell test to confirm they're good).

  • Find the right container: Look for a jar or glass that offers some "guard rails" so your veggie stands upright and doesn't sprawl uncontrollably.

  • Add water: Fill the container with water so it sits just above the bulb, right before the green tops start.

The results were fantastic! I’m happy to say both the green onions and bock choy have perked up significantly, as if they’re as fresh as ever! I can’t wait to use them.
