- Bloom the gelatin: Sprinkle 4 tsp gelatin evenly over 2 tbsp cold water (don’t dump in a pile). Let sit 5 minutes until thick like applesauce. Microwave 10–15 seconds until fully melted, clear, and smooth.
- In a saucepan over medium heat, combine your 1 1/3 lbs of frozen raspberries and 2/3 cup of granulated sugar. Cook, stirring occasionally, until the berries break down and the sugar completely dissolves into a rich liquid. Remove from the heat and strain the warm mixture through a fine-mesh sieve into a bowl to remove the seeds.
- While the strained raspberry reduction is still warm (but not boiling), stir in your melted gelatin until it is completely incorporated. Set the mixture aside to cool to room temperature before folding it into the cream.
- In a chilled bowl, beat 1 pint heavy cream with ½ cup powdered sugar until medium‑stiff peaks form (don’t over‑whip or it will turn grainy when folded).
- Gently fold the cooled raspberry‑gelatin mixture into the whipped cream in two batches, stopping as soon as the mixture is uniform and streak‑free.
- Pipe into 25 small (2 oz) cups, leaving space for topping. Sit the cups on a baking sheet and chill in the refrigerator at least 2 hours to set or up to overnight.
- Bloom the Gelatin: Stir the 1/3 packet of gelatin into the 1 1/3 tablespoons of cold water. Let it sit for 5 minutes, then melt it in the microwave for about 5–8 seconds. Let it cool slightly so it isn't piping hot.
- Beat the 2/3 cup of heavy cream and 3 tablespoons of powdered sugar until thick and soft peaks form.
- With the mixer running on low, slowly pour the liquid gelatin directly into the cream. Turn the speed up and beat until you hit stiff peaks.
- Do these steps just before serving.
- Pipe the whipped cream over the chilled mousse. Gently press a fresh raspberry at the center of the whipped cream.
- First, sprinkle the shaved chocolate over the whipped cream and then sprinkle a little minced fresh mint over the top of the raspberry.
