Mushroom & Asparagus Wild Rice

This Mushroom & Asparagus Wild Rice is an earthy, comforting side dish that brings incredible texture and savory flavor to any meal. Packed with mushrooms, asparagus, and a hint of white wine, it makes an exceptionally gorgeous and festive addition to your holiday table!

INGREDIENTS HIGHLIGHTS

Wild Rice & Grain Mix: A hearty, earthy foundation that provides a satisfying, chewy texture and absorbs all the rich savory flavors of the broth and wine.

Baby Bella or Cremini Mushrooms: Sliced mushrooms that caramelize beautifully in the pan, delivering a deep, meaty umami flavor to every bite.

Fresh Asparagus: Vibrant green spears trimmed and chopped into tender-crisp pieces, adding a fresh, spring-like brightness and snap to the dish.

Aromatics (Onion & Garlic): Finely diced onion and minced garlic sautéed down to create a sweet, fragrant savory base that ties the whole flavor profile together.

Dry White Wine: A splash of crisp white wine used to deglaze the pot, lifting the browned bits and adding a subtle acidity that balances the earthy grains and mushrooms.

Fresh Herbs & Olive Oil: High-quality extra virgin olive oil for rich depth, finished with a generous sprinkle of freshly chopped parsley for a bright, herbaceous pop.

Dried Cranberries (Optional Finishing Garnish): A sweet-tart touch sprinkled on top at the end for a gorgeous splash of color and a delightful burst of contrasting flavor.

SAUTE THE VEGGIES AND DEGLAZE WITH THE WINE

Heat the extra virgin olive oil in a large Dutch oven over medium to medium-high heat. Add the sliced mushrooms in an even layer and sauté until they are nicely browned and tender, pulling them off just a minute or two shy of fully done so they keep their great texture.

Next, toss in the finely diced onion and cook for 4 to 5 minutes until soft and translucent, then stir in the minced garlic for about a minute until wonderfully fragrant. Add the chopped asparagus to the pot and mix everything together for a few more minutes to let the flavors start mingling.

Finally, pour in the dry white wine to deglaze the pan. Let it simmer and reduce by half while using a wooden spoon to scrape up all those delicious browned bits stuck to the bottom of the Dutch oven, building an incredible savory base for your wild rice.

ADD THE RICE AND SIMMER UNTIL DONE

Toss the wild rice right into the pot with your sautéed mushroom and asparagus mixture, stirring gently to let the grains toast for a couple of minutes so they absorb all those rich flavors.

Pour in the broth, bring everything to a rolling boil, then lower the heat to a gentle simmer, cover with a lid, and let it cook for about 25 minutes. Check the rice at that point, giving it another 5 minutes or so if it needs a little extra time to fully absorb the liquid, then season with salt and black pepper to taste before serving it nice and hot!

FINISHINGS

I love finishing this dish with a handful of dried cranberries. They add a bright, tart sweetness that cuts through the earthy richness and gives the whole recipe a festive, holiday-ready feel. Feel free to get creative and toss in toasted pecans, slivered almonds, or fresh herbs of your choice!
