- Pour in the white or red wine, scraping up any browned bits stuck to the bottom of the pot. Simmer for 3–5 minutes until the wine has reduced by about half and the alcohol smell cooks off.
- Stir in the milk (or heavy cream) and the crushed tomatoes. Bring the mixture to a gentle boil, then turn the heat down to low so it maintains a very low simmer.
