Individual Creamy Spinach Casseroles

- Preheat oven to 375 (f)
- Prepare your spinach ensuring it is thawed and squeezed in paper towels/kitchen towel to minimize moisture.
- Melt butter in a medium sized skillet over medium heat and saute the shallots
- Add the spinach, cream cheese, only half (1/4 cup) of the grated Parmesan, salt and pepper and mix together.
- Add about 1 tablespoon heavy cream, more or less depending on your desired consistency.
- Fill 4 ounce ramekins to about 1/2 from the top with the spinach mixture.
- Sprinkle the remaining Parmesan cheese over the top of each serving.
- Bake for 15 minutes.
