This is a fun take on creamed spinach. The cheeses and eggs make these delicious individual casseroles.

Individual Creamy Spinach Casseroles

Ingredients

Instructions

  1. Preheat oven to 375 (f)
  2. Prepare your spinach ensuring it is thawed and squeezed in paper towels/kitchen towel to minimize moisture.
  3. Melt butter in a medium sized skillet over medium heat and saute the shallots
  4. Add the spinach, cream cheese, only half (1/4 cup) of the grated Parmesan, salt and pepper and mix together.
  5. Add about 1 tablespoon heavy cream, more or less depending on your desired consistency.
  6. Fill 4 ounce ramekins to about 1/2 from the top with the spinach mixture.
  7. Sprinkle the remaining Parmesan cheese over the top of each serving.
  8. Bake for 15 minutes.
