Holiday Mashed Potatoes
/These buttery, cheesy mashed potatoes were a star in our Friendsgiving dinner party tonight. Shredded cheddar gruyere and a little horseradish powder give a little twist to this traditional side.

Holiday Mashed Potatoes

- Peel the potatoes and cut them into quarters.
- Put the potatoes into a pot and cover with water.
- Set heat to high and cover. If bubbles begin to push the lid, move the lid to allow a little air exposure and continue to boil.
- Once potatoes are cooked through and very tender, remove from heat and drain into a strainer. Flip the potatoes in the strainer a couple of times to help the water drain.
- Put the potatoes in a large mixing bowl and add the rest of the ingredients, reserving a pad of butter to melt on top, and mix well.
- Transfer the potatoes to a microwave safe serving dish. Once the rest of the food is ready, put the reserved pad of butter on top of the potatoes and microwave from 30-60 seconds, until melted.
