Scrambled Eggs & Smoked Salmon Toast

Toast - it’s a new trend and I’m loving it! This recipe represents the first of many. Since sour dough bread slices are larger these each represent one serving. With the eggs and salmon on this toast, it’s a great breakfast or fun appetizer. Use the multiply servings yield feature in the recipe card below and slice each toast into quarters for a party-sized appetizer.

  1. lightly toast bread
  2. lightly butter toasted bread
  3. Soft scramble egg with a pinch of salt
  4. layer as follows: arugula, eggs, smoked salmon, goat cheese, chives
