/Simple scrambled eggs sometimes hit the spot. The ingredients options are endless, but in this case I used roasted red peppers, green onion and shredded mozzarella cheese. Yummy!

- Melt butter at medium in a non-stick fry pan.
- Break eggs in a bowl with a pinch of salt and mix thoroughly.
- Lower the heat to medium low and add eggs. Stir with a rubber spatula constantly folding the eggs over each other until curds begin to form and the raw eggs are cooked to a soft scramble (3-4 mins), or longer for a hard scramble (5-7 mins), depending on your preference. Increase cooking time with more eggs (I used only 2 eggs here for 1 serving).
- If you're adding ingredients, put those in near the end of the cooking time, but not too late if you want to maintain a soft scramble. You want time for the cheese to melt and other items to warm through.
- Plate and sprinkle with fresh green peppers and ground black pepper.
