4th of July Strawberry Cheesecake Bites

These fresh strawberries are stuffed with cheesecake filling, topped with little bunny graham crackers (it’s an inside joke) and stuck with American flag toothpicks. They’re super easy to make and a total crowd pleaser.

  1. Preparing the cleaned and hulled strawberries: Trim off the tip of the strawberry so it stands up in a little muffin liner when set on its top. Use a melon baller to carve out the strawberry hull, plus a little extra, making room for the cheesecake filling. Chill the strawberries until just before party time or they will get soggy.
  2. Preparing the filling: Use a mixer to thoroughly blend the cream cheese, sugar, vanilla and lemon juice.
  3. Putting it together: Use a piping bag (or trim the tip off of a plastic/freezer bag) to fill the strawberries. Leave it plain or get creative with toppings (cookie, candy, fruit, etc)!
