Oakland Dust Rubbed BBQ Pork Spare Ribs – Indoor Style!

BBQ'd pork spare ribs covered generously in Oakland Dust rub is our new favorite meal. I realize BBQ purists may scoff at the idea of using the oven to create a BBQ style rib, but some of us city folk – without an outdoor option – have to resort to other measures to get our BBQ rib fix. My boyfriend wants this dish on a weekly basis. Totally fine with me. :) It's so simple, incredibly delicious and low-carb!

Oven BBQ Pork Ribs

BBQ'd pork spare ribs covered generously in Oakland Dust rub is our new favorite meal. I realize BBQ purists may scoff at the idea of using the oven to create a BBQ style rib, but some of us city folk – without an outdoor option – have to resort to other measures to get our BBQ rib fix.

  1. Trim excess fat and remove the membrane from the ribs. Pat dry with paper towels or a towel.
  2. Take a baking sheet and pull a long sheet of aluminum foil, a couple inches longer than twice the length of the baking sheet (later you will envelope the ribs in this -- see picture above). Open the foil to its full length and cover the pan with the first half of the foil.
  3. Set the ribs on the foil on the pan. Lightly season the underside of the ribs and generously season the top side. With the ribs top side up, fold over the foil and seal (do not press the foil to the meat). I try to keep a bit of a tent over the top of the ribs to protect the seasoning.
  4. Bake at 300 degrees for 3 hours. Check after 2 1/2 hours to see if the ribs are pulling away from the bone. Gently wiggle one of the ribs to see if it will easily separate. If they are, move on to step 5. Otherwise, rewrap the foil and cook for another 30 minutes.
  5. Carefully unfold and tear the top of the foil off. Either continue to cook as dry rub or brush the ribs with BBQ sauce and cook for another 1/2 hour. I prefer to serve the ribs dry and serve with a bowl of BBQ sauce for dipping.
