Roasted Asparagus with Red Pepper Puree

Roasted Red Pepper Puree

Instructions

  1. Toss asparagus with fresh minced garlic, olive oil, and salt and pepper and broil in the oven at 400 (f) for about 15 minutes, turning occasionally.
  2. For the red pepper puree, I use an emersion blender to blend all of the puree ingredients shown above: 1 cup roasted red peppers, 1 tablespoon grated Parmesan, 1 teaspoon olive oil, 1 teaspoon fresh minced garlic and salt to taste.
