Instructions
- Toss asparagus with fresh minced garlic, olive oil, and salt and pepper and broil in the oven at 400 (f) for about 15 minutes, turning occasionally.
- For the red pepper puree, I use an emersion blender to blend all of the puree ingredients shown above: 1 cup roasted red peppers, 1 tablespoon grated Parmesan, 1 teaspoon olive oil, 1 teaspoon fresh minced garlic and salt to taste.
