Bistro Lobster Bisque

Elevated with sweet leeks, Cognac, and a fragrant touch of fresh tarragon, this Bistro Lobster Bisque delivers all the deep, luxurious lobster richness of a high-end French bistro straight to your table.

INGREDIENTS HIGHLIGHTS

THE LOBSTERS

Fresh Whole Lobsters: Cooked fresh, small lobsters yield exceptionally tender, sweet meat for the soup while providing rich, flavor-packed shells for the broth foundation.

Lobster Boiling Water: Using the reserved, ocean-salted water from boiling the lobsters as the stock liquid traps every bit of delicate seafood essence that would otherwise go down the drain.

THE BROTH

Yellow Onion, Carrots & Celery: The classic mirepoix base cooks down in the stockpot to build a sweet, rounded aromatic foundation that balances the brine of the shell broth.

Smashed Garlic Cloves: Gently simmering crushed whole garlic cloves into the stock infuses a mellow, sweet warmth without any sharp or burnt bite.

Tomato Paste: Sautéing the tomato paste with the roasted shells until it darkens caramelizes its natural sugars, removing raw acidity and giving the broth its rich umami depth and signature amber hue.

Fresh Tarragon & Thyme: Fresh thyme supplies a subtle, warm earthiness, while fresh tarragon introduces a delicate anise note that naturally elevates the sweet lobster flavors.

Bay Leaves & Black Peppercorns: Simmered gently in the stock, these whole spices contribute a subtle herbal background and gentle warmth.

THE SOUP

Butter & Flour Roux: Sautéing shallots in butter and whisking in flour creates a smooth thickening agent that gives the bisque its iconic, velvety mouthfeel without feeling heavy.

Finely Diced Shallots: Milder and sweeter than regular onions, diced shallots melt smoothly into the butter base to add delicate aromatic sweetness to the soup.

Dry White Wine & Cognac (or Brandy): White wine cuts through the richness with bright acidity, while Cognac introduces a warm, oaky depth. Simmering them for 20 minutes cooks off the alcohol, leaving behind concentrated, gourmet flavor.

Heavy Cream (or Whole Milk): Stirred in at the very end, cream rounds out the acidity and alcohol notes, binding all the elements together into a silky, decadent finish.

Fresh Lemon Juice & Cayenne Pepper: A dash of cayenne delivers a tiny whisper of background heat, while fresh lemon juice brightens the creaminess right before serving.

Salt & Black Pepper: Simple, essential seasonings adjusted at the very end to pull all the natural seafood and herbal flavors into sharp focus.

Olive Oil Drizzle & Fresh Tarragon Sprig: A double circle of fruity extra virgin olive oil adds a luxurious texture on top, while a short fresh tarragon sprig in the center delivers a bright pop of color and aroma with every spoonful.

BOIL THE LOBSTER & MAKE THE BROTH

Bring a large pot of salted water to a rolling boil and cook the 6 lobsters for 8–10 minutes until bright red. Set the lobsters aside to cool, making sure to reserve 6–7 cups of the boiling water. Extract the meat from the tails and claws, chop, and refrigerate for later, keeping all empty shells and heads.

Heat 2 tbsp oil in a stockpot over medium-high heat and sauté the shells, onion, carrots, celery, and garlic for 6–8 minutes. Stir in 3 tbsp tomato paste for 2 minutes until dark, then pour in the reserved lobster water, thyme, tarragon, bay leaves, and peppercorns. Simmer uncovered for 35 minutes, then strain through a fine-mesh sieve, pressing to extract every drop.

MAKE THE SOUP BASE

Melt 5 tbsp butter in a clean pot over medium heat and sauté the sliced leeks for 3–4 minutes until soft and fragrant. Whisk in 4 tbsp flour and cook for 1–2 minutes until pale gold.

Slowly whisk in your strained lobster broth until smooth, then stir in the white wine and Cognac or Brandy. Bring to a gentle simmer, cover partially, and let cook for 20 minutes so the alcohol cooks off and the soup thickens.

FINISH & SERVE

Reduce heat to low and stir in the heavy cream, fresh lemon juice, and cayenne pepper. Season with salt and black pepper to taste, then fold in the chopped cooked lobster meat and let it warm through for 2 minutes.

Ladle the soup into warm bowls, drizzle extra virgin olive oil in two concentric circles over the top, and nestle a short, fresh tarragon sprig right in the center.

Instructions

Cook the Lobster
  1. Boil: Bring a large pot of salted water to a rolling boil. Add the lobsters and cook for about 8–10 minutes until bright red.
  2. Prep Meat & Save Water: Remove lobsters to cool. Save 6 to 7 cups of the lobster boiling water for your stock liquid. Once cool enough to handle, extract all meat from tails and claws; chop and refrigerate for later. Keep all shells, bodies, and heads.
Make the Broth
  1. Sauté Shells & Veggies: Heat oil in a large stockpot over medium-high heat. Add your lobster shells, onion, carrots, celery, and smashed garlic. Sauté for 6–8 minutes until fragrant.
  2. Add Tomato: Stir in the tomato paste, thoroughly coating the shells and vegetables. Cook for 2 minutes until the paste turns a dark, rusty red.
  3. Simmer: Pour in 6 to 7 cups of the reserved lobster boiling water (or stock blend), along with the fresh thyme, fresh tarragon, bay leaves, and peppercorns. Bring to a boil, reduce heat to low, and simmer uncovered for 35 minutes.
  4. Strain: Strain through a fine-mesh sieve into a large bowl, pressing hard on the solids to extract all liquid. Discard the solids.
Make the Soup
  1. Make the Roux: Melt butter in a clean, large pot over medium heat. Add diced shallots and cook until soft (2 minutes). Whisk in the flour and cook for 1–2 minutes until pale gold.
  2. Combine & Simmer: Slowly whisk in your strained lobster broth until smooth, then stir in the white wine and Cognac/Brandy. Bring to a gentle simmer, cover partially, and let it cook for 20 minutes so the alcohol cooks off and the soup thickens.
  3. Finish & Platter: Reduce heat to low. Stir in the milk (or heavy cream), lemon juice, and cayenne pepper. Season with salt and pepper to taste. Fold in the cooked lobster meat to warm through for 2 minutes, then ladle into warm bowls.
  4. Garnish: Drizzle extra virgin olive oil in two concentric circles around the top of each bowl, and place a short, fresh tarragon sprig right in the center.
