Bacon, Eggs & Cheese Baguette Toast
/This simple Bacon, Eggs, and Cheese Baguette Toast is great for breakfast or even a late night snack. So crunchy and melty cheesy — yum!
INGREDIENTS
Baguette (¼ section, ends trimmed and sliced lengthwise) — Crisp, toasty edges with a soft center that holds all the melty, savory layers.
Butter (½ tablespoon) — Adds a golden, lightly rich base for the eggs and cheese.
Eggs (2, scrambled) — Soft, fluffy, and the perfect creamy layer against the crunchy toast.
Salt & Pepper (to taste) — Simple seasoning that sharpens the eggs and balances the richness.
Bacon (4 slices, cooked crispy) — Salty, crunchy contrast that brings the whole toast to life.
Cheddar Cheese (4 slices) — Melty, sharp, and the glue that ties everything together.
HOW TO MAKE IT
Melt the butter in a skillet over medium heat. Place the baguette pieces facedown, pressing gently until they’re warm, golden, and a little crispy. Cook the bacon in the same skillet until it reaches your perfect level of doneness. Drain the bacon on a paper towel and the bacon fat into a jar for disposing or storing later.
Return the skillet to the stovetop on medium heat. Crack the eggs directly into the lightly bacon-greased skillet. Season with salt and pepper, stirring constantly until they’re soft and just set.
To assemble: layer the fluffy eggs over the toasted baguette, followed by the bacon and a generous slice of cheddar. Pop the toasts under the broiler for a minute or two until the cheese is bubbling and melty. Serve immediately while it's hot.
