For this toast I used roasted red peppers instead of pimentos in the spread and an asiago cheese sour dough bread. Yum!

For this toast I used roasted red peppers instead of pimentos in the spread and an asiago cheese sour dough. Yum!

  1. Slice your heirloom tomatoes and set on a cutting/working surface. Sprinkle with a little salt and drizzle with olive oil. Let these marinade for 30 minutes or so.
  2. Add the diced Pancetta to a frying pan and sauté on high until most of the fat has rendered and it becomes a little crispy. About 6-8 minutes.
  3. Once steps 1 and 2 are complete, get a pan hot and add a little butter for toasting the bread. Toast both sides of each slice of bread, adding more butter as needed.
  4. Layer each slice of bread with the ingredients in the order they are given above (cheese spread, tomatoes, Pancetta, shaved fennel, chives and edible flowers (if using)
