/For this toast I used roasted red peppers instead of pimentos in the spread and an asiago cheese sour dough bread. Yum!

For this toast I used roasted red peppers instead of pimentos in the spread and an asiago cheese sour dough. Yum!

- Slice your heirloom tomatoes and set on a cutting/working surface. Sprinkle with a little salt and drizzle with olive oil. Let these marinade for 30 minutes or so.
- Add the diced Pancetta to a frying pan and sauté on high until most of the fat has rendered and it becomes a little crispy. About 6-8 minutes.
- Once steps 1 and 2 are complete, get a pan hot and add a little butter for toasting the bread. Toast both sides of each slice of bread, adding more butter as needed.
- Layer each slice of bread with the ingredients in the order they are given above (cheese spread, tomatoes, Pancetta, shaved fennel, chives and edible flowers (if using)
