Smoked Trout Pasta with Cream Sauce

Ingredients

Instructions

  1. Bring a large pot of water with salt to a boil
  2. Heat olive oil in a large skillet over medium heat
  3. Saute the shallots until soft
  4. When the water comes to a boil in the large pot, add the pasta
  5. Add the cream, lemon juice, goat cheese, salt and pepper to the skillet with the shallots, stirring regularly
  6. When the pasta's ready, reserve 1 cup of the water and drain the pasta
  7. Add the peas and tarragon to the cream sauce and mix well. Use the pasta water to adjust the sauce's consistency, if needed.
  8. Add pasta and toss, then plate and sprinkle remaining fresh herbs atop.
