Smoked Trout Pasta with Cream Sauce
Ingredients
Instructions
- Bring a large pot of water with salt to a boil
- Heat olive oil in a large skillet over medium heat
- Saute the shallots until soft
- When the water comes to a boil in the large pot, add the pasta
- Add the cream, lemon juice, goat cheese, salt and pepper to the skillet with the shallots, stirring regularly
- When the pasta's ready, reserve 1 cup of the water and drain the pasta
- Add the peas and tarragon to the cream sauce and mix well. Use the pasta water to adjust the sauce's consistency, if needed.
- Add pasta and toss, then plate and sprinkle remaining fresh herbs atop.
