Instructions
Chocolate Fudge
- Lightly butter an 8x8 or 9x9 inch baking pan or line it with parchment paper.
- In a heavy, medium sized saucepan, combine the sugar, cocoa powder, milk, and corn syrup. Stir over medium heat until the sugar dissolves.
- Attach a candy thermometer to the side of the pot. Continue to cook the mixture without stirring, until it reaches 234°F–240°F.
- Remove the pan from the heat. Immediately add the butter in pieces on top, but do not stir it in.
- Let the mixture cool, undisturbed, to lukewarm. This usually takes about an hour.
- Add the vanilla extract.
- Using a wooden spoon or a hand mixer, beat the fudge until it becomes thick and starts to lose its glossy appearance.
- Here's where you add your optional ingredients. Quickly stir in your prepared nuts, candy, etc. and immediately pour the fudge into the prepared pan, spreading it out evenly.
- Refrigerate until firm (about 2 hours). Once set, use a sharp knife to cut into squares.
Peanut Butter Fudge
- Lightly butter an 8x8 or 9x9 inch baking pan or line it with parchment paper.
- Mix cream cheese and peanut butter.
- Add sugar and vanilla and mix well.
- Add optional ingredients at this point: chopped nuts, chocolate chips, candy, etc.
- Refrigerate until firm (about 2 hours). Once set, use a sharp knife to cut into squares.
